Mechanism of action of benzoic acid
The antiseptic mechanism of benzoic acid is that it has strong lipophilicity and easily penetrates into the cell body through the cell membrane, thereby interfering with the permeability of microbial cells such as bacteria and mold, and inhibiting the absorption of amino acids by the cell membrane.
The benzoic acid molecule entering the cell can ionize and acidify the alkali stored in the cell, and can inhibit the activity of the respiratory enzyme system of the cell, and prevent the condensation reaction of acetyl-CoA, thereby functioning as a food antiseptic. Benzoates can be converted to an effective form of benzoic acid in acidic foods with the same antibacterial effect as benzoic acid.
Our company- Jiyou Industries Co.Ltd. has been working in the food and ingredients sector for many years. At present, the main products are benzoic acid, sodium benzoate, benzyl benzoate, sorbic acid and other ten kinds. If you need, you are welcome to contact us, it is our pleasure to cooperate with you.
